Beef Empanadas

Ingredients:

  • For the dough:
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup butter, chilled and diced
  • 1 egg
  • 1/3 cup ice water
  • For the filling:
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 1/2 pound ground beef
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)

Dough Instructions:

  1. In a bowl, combine flour and salt.
  2. Cut in butter until mixture resembles coarse crumbs.
  3. Mix in egg, then water a tablespoon at a time until dough comes together.
  4. Wrap in plastic and chill for 1 hour.

Filling Instructions:

  1. Heat olive oil and sauté onion until translucent.
  2. Add ground beef, cumin, paprika, salt, and pepper. Cook until beef is browned.
  3. Preheat oven to 400°F (200°C).
  4. Roll out dough and cut into rounds.
  5. Spoon filling onto one half of each round, fold over, and crimp edges to seal.
  6. Place on a baking sheet and brush with beaten egg.
  7. Bake for 20-25 minutes or until golden brown.
