Spanish Creamy Potato Croquetas

Ingredients:

  • 2 cups mashed potatoes
  • 2 cups béchamel sauce (instructions below)
  • 1/2 cup grated cheese (such as cheddar or Manchego)
  • 1/2 cup flour
  • 2 eggs, beaten
  • 1 cup bread crumbs
  • Salt and pepper to taste
  • Oil for frying

Béchamel Sauce:

  1. Melt 2 tablespoons of butter in a saucepan.
  2. Stir in 2 tablespoons of flour and cook for 1-2 minutes.
  3. Gradually whisk in 2 cups of milk until smooth.
  4. Cook, stirring, until thickened. Season with salt, pepper, and nutmeg to taste.

Croquetas Instructions:

  1. Mix mashed potatoes with béchamel sauce, cheese, salt, and pepper.
  2. Chill the mixture in the refrigerator until firm.
  3. Form into small cylindrical shapes.
  4. Dip in flour, then beaten egg, then coat with bread crumbs.
  5. Heat oil in a frying pan and fry until golden brown.
  6. Drain on paper towels and serve hot.
