Spanish Creamy Potato Croquetas
Ingredients:
- 2 cups mashed potatoes
- 2 cups béchamel sauce (instructions below)
- 1/2 cup grated cheese (such as cheddar or Manchego)
- 1/2 cup flour
- 2 eggs, beaten
- 1 cup bread crumbs
- Salt and pepper to taste
- Oil for frying
Béchamel Sauce:
- Melt 2 tablespoons of butter in a saucepan.
- Stir in 2 tablespoons of flour and cook for 1-2 minutes.
- Gradually whisk in 2 cups of milk until smooth.
- Cook, stirring, until thickened. Season with salt, pepper, and nutmeg to taste.
Croquetas Instructions:
- Mix mashed potatoes with béchamel sauce, cheese, salt, and pepper.
- Chill the mixture in the refrigerator until firm.
- Form into small cylindrical shapes.
- Dip in flour, then beaten egg, then coat with bread crumbs.
- Heat oil in a frying pan and fry until golden brown.
- Drain on paper towels and serve hot.
