Juicy boneless chicken thighs with a heavy rub of carne asada seasoning and a bright orange, lime, and lemon marinade, cooked hot and fast on the grill. Serves 10.
Ingredients:
- 6 to 7 lb boneless, skinless chicken thighs or leg meat (no breast)
- Carne asada seasoning (such as Vallarta), enough to coat the chicken liberally
- 1 cup orange juice
- 1/2 cup lime juice
- 1/2 cup lemon juice
Instructions:
- Rub the chicken all over with a liberal amount of carne asada seasoning. Cover and let it rest.
- Mix the orange juice, lime juice, and lemon juice to make the marinade (about 2 cups).
- Put the chicken in a large bowl or zip-top bags, pour in the marinade, and marinate in the refrigerator for 1 to 4 hours.
- Heat the grill to medium-high.
- Take the chicken out of the marinade and grill for 5 to 6 minutes per side, until the thickest pieces reach 175 degrees F inside.
- Let the chicken rest for 5 minutes before serving.
Note: The marinade is 2 parts orange juice to 1 part lime and 1 part lemon, so it's easy to scale up or down. Use thighs or leg meat only, not breast.
