A delicious and visually appealing side dish, perfect to pair with grilled ribeye steak.
Ingredients:
- 4 large baking potatoes
- 5 cloves of garlic, minced
- 5 tablespoons of butter, melted
- Salt and pepper to taste
- 1 1/2 cups of grated Parmesan cheese
- Fresh chopped parsley for garnish
Instructions:
- Preheat your oven to 425°F (220°C).
- Make thin slices along each potato, cutting almost to the bottom but not all the way through. You can place the potato between two chopsticks or wooden spoons to prevent the knife from cutting all the way through.
- Combine the melted butter and minced garlic, then brush over the potatoes, making sure some gets in between the slices.
- Season generously with salt and pepper.
- Bake for about 50-60 minutes, or until the potatoes start to turn crispy and golden brown.
- Remove from the oven and sprinkle the Parmesan cheese on top, again making sure some gets between the slices.
- Return to the oven for another 15-20 minutes, until the cheese is melted and golden.
- Garnish with fresh chopped parsley before serving.
