Lemon Sorbet with Fresh Strawberries

Ingredients:

  • 2 cups of sugar
  • 2 cups of water
  • 2 cups of freshly squeezed lemon juice (about 12 lemons)
  • 2 tablespoons of lemon zest
  • 2 cups of fresh strawberries, hulled and sliced

Instructions:

  1. In a saucepan, combine the sugar and water. Bring to a simmer over medium heat, stirring until the sugar dissolves. Remove from the heat and let it cool completely. This is your simple syrup.
  2. Once the simple syrup is cooled, add the lemon juice and lemon zest. Stir to combine.
  3. Churn the mixture in an ice cream maker according to the manufacturer's instructions. If you don't have an ice cream maker, pour the mixture into a shallow dish and freeze. Every 30 minutes for the first few hours, stir the mixture to break up any ice crystals.
  4. Once the sorbet is frozen, serve it with fresh sliced strawberries on top.
